Koshari

Koshari - PalatesOfIndia

 

When we asked the locals in Cairo to suggest one signature dish of Egypt that we should absolutely try, the answer was  “Koshari”. I was surprised by this because not only it is a simple dish but also because it is purely vegetarian. When we tried Koshari at Meena House in Cairo I knew this is one dish I am taking to my kitchen.

To make Koshari,

– Deep fry one sliced onion and keep aside

– Fry 6 cloves of chopped garlic in a pan, add 2 Tbl sppons of white vinegar and 1 can of tpmato paste to it. The souce is ready.

– Layer cooked rice, boiled brown lentils, cooked macaroni, boiled chick peas in a plate. pour the sauce on it and top it with the fried onions and Koshri is ready to serve.

Lahori Fish is a popular dish in Lahore, Pakistan and also in West Bengal, India.

To make Lahori Fish,

-Grind together 1/2 tea spoon of black pepper, 4-5 red chilies, 1 spoon of coriander seeds, 1/2 tea spoon turmeric powder, 1/2 tea spoon dry mango powder, 2 bay leaves, 1 inch cinnamon, 3 green cardamom, 4-5 cloves, 1/2 tea spoon cumin seeds and 1/2 tea spoon of fennel seeds.

– Add 2 tea spoons of tamarind paste and salt to the above ground powder and make a paste.

-Coat the fish pieces with the above paste and keep aside for 30 minutes.

– Sprinkle 2 tea spoons of flour on the marinated fish peices.

– Heat oil in a pan and add the fish peices

– Fry the fish in low heat until done.

– Squeeze few drops of fresh lemon juice before serving
